Pearl Millet Porridge or Sajje Ambali or Kambu Kanji
Pearl millet is known as Sajje in Kannada,Kambu in Tamil and Bajra in Hindi.
It is very healthy and highly nutritious.
Despite its high nutritional value, it has long been considered a poor man’s food. From StartDesi we want to revive & promote this excellent grain.
Pearl Millet is non glutinous and is full of vitamins and minerals.
It is also rich in proteins and fiber. Being rich in fiber, it helps in weight loss as it keep you fuller for a longer time.
Pearl Millet Porridge or Sajje Ambali or Kambu kanji/koozh is known to cool the body, so it is considered a perfect breakfast during summer.
Pearl Millet Porridge or Sajje Ambali or Kambu Kanji

Ingredients
Pear millet flour – 1/4 cup
Water – 1 & 1/2 cup
Butter milk – 1 cup
Salt – As needed
To Temper
Oil – 1 tsp
Mustard – 3/4 tsp
Green/Red chilli – 2
Asafoetida/ hing – A pinch
Curry leaves – 5 leaves
Method
- Dissolve Pearl Millet flour in water, with salt, without any lumps well in a vessel. Heat over stove with constant stirring. I used my whisk to dissolve the flour easily. But no worries you can use ladle itself as it gets dissolved easily. Keep stirring all the times to avoid forming lumps.
2. Keep stirring to avoid getting lumps or stuck to the bottom. It gets thicker as it gets heated and when it starts to boil well, switch off the stove. By now the flour would have got cooked too.
Keep stirring to avoid forming a layer as it cools down. Once its cooled down(becomes more thicker), add butter milk and mix well.
4. Lastly temper with the items given under ‘To temper’ table and mix it with the porridge. If you are using green chilli, just slit it into two before adding.
